Better Butter

There are so many foods that appear complex, but are really very simple to make yourself. I love to make jams, jelly, sauces, salsas, pickles, and much more. They all appear difficult and fancy and people are really impressed. The truth is that it's all easy. If it wasn't easy, I wouldn't do it. I don't have time for fussiness, but I want to eat well. And I want to eat the most fresh food that I can.

I was having a correspondence with a friend tonight about butter. It's a good example. Butter is a delicious accompaniment to food - spread on toast or melted over a baked potato, butter is just yummy. Most people have no idea how butter is made. Only that it is made from milk...or actually from cream. Making butter yourself is simple. If you don't use much butter, like me, it can be a treat to just make your own. Your friends will be oh, so impressed! And it's super easy...but you know me, I have to add a disclaimer. Remember that butter is a super high calorie item, since it's 100% (essentially) fat! Just a little goes a long way. Happy butter making!

My wife used to make her own "spread." She would take store-bought butter, let it soften, and then food-processor it with some olive oil. It was healthier than regular butter and it extended the butter.
