I am not a lover of leftovers. In fact, I don't like them very much. With few exceptions, I think everything is better the first time around. I try hard to make just enough for dinner for me and my sweetie and whoever happens to be dining with us. Leftovers tend to go bad in our house. That is unless they have a makeover!
Tonight I made curry chicken in the crock-pot to be served with brown rice and roasted veggies. It was delish, but not something that translates well to lunch at work the next day - which is one of the few ways that I will actually eat up the leftovers in our fridge. So, as we were eating the delicious chicken served over the steamed rice, the sauce providing a nice dipping sauce for the veggies, I was already scheming...
As it turns out, when I was prepping the crock-pot, I added a little too much water for the 1/2 portion of chicken that I was cooking. (Tip: if you don't like leftovers and there are only 2 of you, cut most recipes in 1/2 to get the perfect portion!) As the chicken cooked, it created a wonderful spice-filled broth.
When we finished our dinner, there was one skinless chicken thigh left in the broth. I shredded it and added it back to the pot, chopped up the leftover zucchini and roasted sweet peppers and shallots and tossed them in too. Finally, I added the remaining brown rice and added a can of drained chick-peas (high in fiber and protein and very filling)! Voila, a new meal! Leftover Makeover in an instant.
Tomorrow I'm having curry chicken and chick pea stew. =) It's not leftovers...and it'll be delicious. Hope you're inspired to makeover your leftovers too!
