Vacation Eats

Vacation is a wonderful time to hit the reset button.  Some people see it as an opportunity to splurge - eating and spending money with total abandon - and be super-lazy.  Now, I wouldn't begrudge anyone a treat or two.  I certainly had my share of treats on our vaca!  At the same time, I would suggest using this time as a chance to recalibrate, to use the TIME you have (precious time that you may not usually have to devote to really healthy eating) to cooking, experiment with new activities and spend some time in quiet reflection. For me, that means lots of colorful vegetables, fresh vegetable juices and a new hot yoga class.  Here's how I did it...
Road kill-er sauces.  Definitely tried something new here.
Colorful grilled veg w/baked beans - perfect for outdoor dining!
DAB Salad - a dab of each specialty offered at George's. Potato, hummus, quinoa, Asian noodle, and roasted corn.
Meringue taller than the pudding it covers.  Yum.
My love affair with beet juice continues...


Um...coconut donuts.  Can't leave our beach without a stop at the Donut House.  Can't resist.
