That's what I decided to do this week. My little cottage has a galley kitchen and supplies so that I can cook and I have a full-size refrigerator stocked with goodies. For anything that I've forgotten, there's a grocery store a few miles away and a little gourmet market between here and there. The ride will be a bonus, since the exercise is also on the list!
So far, I've done well. Yesterday's breakfast was 1/2 grapefruit, poached egg and toast with deliciously strong coffee. Lunch was a big green salad with black beans and fresh fruit (1/2 apple and 1/2 orange). Dinner last night was roasted veggies, penne with marinara, and a green salad. Today's breakfast was a 2-egg omelet with cheese and leftover roasted veggies. All super simple, healthy meals chock full of high-fiber, nutrient-dense foods. I feel great, since I'm not over-eating or over-indulging. Though I did take a bike ride down the beach for gelato yesterday! Just a half cup of the yummy treat isn't so bad and I figure I'll walk/ride off the extra calories.
An added bonus to preparing my own healthy meals during this vacation is the money savings. Meals for a few bucks instead of the minimum $10-20 that I'd be spending at the trendy tourist spots near my cottage. And...there's a yoga studio across the street and today I'm gonna check out the cost for drop-in classes. I can spend my savings on a class...what a treat! That doesn't mean that I'm not going out while I'm here; all things in moderation.
